Eight Meals

That is how many meals we've eaten from Thanksgiving leftovers. I am pleased that we've had them last this long. The turkey is all gone now, the stuffing, and potatoes, the gravy, the green beans, and the sweet potatoes. The only thing left is a couple pieces of caramel pecan cheesecake. The pumpkin pie was finished off yesterday for breakfast. I was so grateful for the minimal cooking I've had to do the last few days because of all my hard work last week, and with my husband home to help out more with the dishes, I've had a rather easy time of it and was able to work on some projects.
The only food that didn't make it past the Thanksgiving meal was the broccoli salad, but that really doesn't keep, anyway. The cranberry jell-o and rolls didn't last the day, but there was plenty left of everything else! Forgive me for feeling some measure of satisfaction, but I had intended to make enough food so that I wouldn't have to cook for a while. I succeeded.:-)
Now I once again have some room in my refrigerators, and I will likely do some baking with the children today. Perhaps more pumpkin pie might be in order; I have more pumpkin puree in the refrigerator, and my son and I love pumpkin pie. It's too delicious to save for holidays.
